Ingredients:

  • 1 lemon, zested and juiced
  • 400g (~3 cups) fresh strawberries, sliced
  • 100g (1/2 cup) sugar
  • 2 tsp vanillia extract
  • 5 large eggs
  • Pinch of salt
  • 150g (3/4 Cup) margarine

Instructions:

  1. Tip: Zest lemons before juicing. This is MUCH easier to do!
  2. blend strawberries at high speed until smooth (if necessary, pressure through a fine mesh to remove seeds)
  3. In a saucepan, add lemon zest, lemon juice, strawberries, white sugar, eggs and salt. Mix well.
  4. Place saucepan on burner and turn to medium heat.
  5. Whisk continually for 15 minutes. This is to prevent egg from curdling. Curd will begin to thicken between 10 and 15 minutes (around 70C)
  6. After 15 minutes, remove from heat and add butter, a large spoonfull at a time, whisking until melted and mixed in.
  7. Pour curd through a fine mesh strainer. This will remove the zest and any partially cooked egg.
  8. Chill curd for 3 hours or overnight. Curd will continue to thicken as it cools
